One of the best seasons of the year is coming closer and closer. Summer is not completely gone but you can smell fall everywhere. And what better way to say goodbye to summer and welcome fall than with the perfect Fall Ice Cream: Pumpkin Spice!
The answer, there isn’t any better way! This fall ice cream will confuse your taste buds first making them think summer with its coldness but then they’ll explode with the fall flavors.
I know this already sounds good enough and you probably are already preparing the ingredients, but… it gets better! This healthy Pumpkin Spice Fall Ice Cream is vegan + Paleo made with 5 simple ingredients and no refined sugar.
I could blame this premature pumpkin-ing on the need to get this chilly treat to you before the warm weather leaves us. But truthfully ice cream and pumpkin spice things are two of my deepest dessert loves, and I just couldn’t wait any longer to combine them.
- 1 15oz. can pumpkin puree
- 2 cups coconut milk
- 1 cup Medjool dates (about 12)
- 1 tbsp pumpkin pie spice
- 1 Scoop Sun Pyramid Health Protein Powder
- Combine all the ingredients in a blender. Blend on high until smooth and creamy.
- Pour into a shallow pan or dish.
- Freeze overnight.
Remove from the freezer 10-15 minutes to soften before scooping. Alternatively, break apart the pan of ice cream into chunks and re-blend for an even creamier texture.
Serve and enjoy!
