  • 1/2 pound small red-skinned potatoes cut into 1/2-inch pieces
  • 2 tsp extra-virgin olive oil
  • 2 large skinless, boneless chicken breasts (about 1 1/2 pounds)
  • 1 large bunch kale, stems removed, leaves torn (about 10 cups)
  • 3 cloves garlic, thinly sliced
  • Kosher salt and freshly ground pepper
  • 4 cups mixed salad greens
  • 1 tablespoon fresh lemon juice
  • 1/2 cup cherry tomatoes
  • 1/3 cup grated parmesan cheese


Take a baking tray and put some red-skinned potatoes on it and toss them with 1/2tsp olive oil.  Now preheat your oven to around 425O F.  Take some kale in a large-sized bowl and toss them with 1/4tsp salt, 1/2tsp olive oil, pepper and garlic. Place them on the baking sheet together with potatoes and roast them for 15-20 minutes until potatoes are tendered and kale becomes crispy brown.

Now preheat a grill pan and pour little olive oil on it and brush for few seconds. Take the boneless chicken breast and slice them half horizontally so that you can make four cutlets. Layer evenly with 1/2tsp olive oil and season the chicken breast with pepper and salt. Now, cook per side of the chicken slice for around two to four minutes.

Blend the green salads, tomatoes, lemon juice, parmesan, salt and pepper on a large-sized bowl. Add 1/2tsp olive oil, potatoes and kale to the bowl and toss them well. Now split the chicken slices into plates and top with any collected juice. Now your grilled chicken is ready to serve along with kale salad.
