2 cups cooked couscous cooled to room temperature
1 cup hemp seeds (we’ve found this convenient superfoods Amazon store, 100% recommended)
1 red onion finely chopped (it can be diced as well if you want the texture)
3 large tomatoes finely chopped (you may use cherry tomatoes if in season)
1 bunch of fresh parsley chopped
1/4 cup olive oil (you may use more if is too dry)
2-3 large lemon juiced
3 garlic cloves, minced
2- Teaspoons of white vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
- Add the cooked (and cooled) couscous to a large serving bowl.
- Add everything to the serving bowl with the couscous. Toss very well to combine.
- Taste salad in case it may need more salt and or pepper, olive oil or lemon juice.
- Once ready. Garnish with additional hemp seeds and parsley.
- Finally, serve the salad at room temperature or chilled.
