Couscous salad

This couscous and hemp seeds salad makes a great lunchbox filler for a day out and is equally good at home from the fridge.

Ingredients:

2 cups cooked couscous cooled to room temperature
1 cup hemp seeds (we’ve found this convenient superfoods Amazon store, 100% recommended)
1 red onion finely chopped (it can be diced as well if you want the texture)
3 large tomatoes finely chopped (you may use cherry tomatoes if in season)
1 bunch of fresh parsley chopped
1/4 cup olive oil (you may use more if is too dry)
2-3 large lemon juiced
1-lime juiced
3 garlic cloves, minced
2- Teaspoons of white vinegar
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions:

  1. Add the cooked (and cooled) couscous to a large serving bowl.
  2. Add everything to the serving bowl with the couscous. Toss very well to combine.
  3. Taste salad in case it may need more salt and or pepper, olive oil or lemon juice.
  4. Once ready. Garnish with additional hemp seeds and parsley.
  5. Finally, serve the salad at room temperature or chilled.
